Its corner spot on Prospect Street, next to Richard Walker’s Pancake House, will serve its full range of coffee drinks, which include its signature Rose Water Latte and Mint Mocha Latte, as well as a more robust brunch selection akin to what’s currently offered at its Hillcrest hub, which ranges from acai bowls to grilled sandwiches. Known for its Instagrammable interiors, this spot will feature a coastal color scheme and rose pink chairs. Most of its seating will be outside its folding glass doors on large front and side/courtyard patios. Another recent menu addition, soft-serve ice cream, will be available here in a cone, cup, or as a cold brew float in two flavors, vegan matcha and Best Drink Ever (coffee with cream and vanilla). French toast will be one of the new dishes debuting in La Jolla, including one variation flavored with almond butter and banana.
 Courtesy rendering
The local roaster expands its fast-growing empire
